I don’t have TikTok, but I do use Pinterest, where I recently discovered a refreshing salad that’s become a favorite in our house, especially on taco nights. We often found ourselves missing out on veggies during taco dinners, which I don’t like to skip. When I came across this recipe, I knew I had to give it a try, and it quickly became a staple in our home. The first time we made it, we didn’t have chili crisp oil, but we did have Trader Joe’s Crunchy Chili Onion Sprinkle, which worked perfectly as a substitute. Here’s how I adapted the recipe to “healthify” it and use what I had on hand.

Ingredients
3-4 mini cucumbers, sliced into thin circles
6-7 mini bell peppers (orange, red, or yellow), sliced into thin circles
2 tablespoons chili crisp oil (e.g., Fly By Jing, Momofuku, or Trader Joe’s Chili Crisp Oil)
or ( this is what I use) 1-2 tablespoons Trader Joe’s Crunchy Chili Onion Sprinkle (use less if serving young kids, as it can be a bit spicy)
1/4 cup Ginger Sesame Dressing ( we use Primal Kitchen)
2 1/2 teaspoons Everything But The Bagel Seasoning (adjust to taste)
Instructions:
Slice the Vegetables:
Slice the mini cucumbers and bell peppers into thin circles.
Combine the Ingredients:
In a large bowl, add the sliced cucumbers and bell peppers.
Pour in the chili crisp oil (Fly By Jing, Momofuku, Trader Joe’s Chili Crisp Oil) or sprinkle with Trader Joe’s Crunchy Chili Onion Sprinkle (using less if serving young kids).
Add the Ginger Sesame Dressing and sprinkle with Everything But The Bagel Seasoning.
Mix and Chill:
Toss everything together gently until the vegetables are evenly coated with the dressing and seasoning.
Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
Serve:
Serve as a refreshing side dish or snack. For a high-protein option, you can serve it over 1 cup of cottage cheese if you’re not dairy-free or add some left over chicken to the bowl and make it a chicken salad.
Storage:
This salad lasts up to 4 days in the refrigerator and is a perfect option to have on hand when you need a quick lunch or snack.
