I don’t know if you saw, but my kids recently declared their favorite meal—Daddy's Tacos. And I have to say, I can’t disagree. They’re seriously that good. In fact, they’re so good that we often find ourselves enjoying them on Mondays because, honestly, who can wait until Taco Tuesday?
One of the best things about Daddy’s Tacos, aside from their amazing flavor, is how simple and inexpensive they are to make. We typically spend about $30 or less each week on the ingredients, which is pretty incredible considering how satisfying and crowd-pleasing this meal is. Tacos can seem overcomplicated, but we’ve discovered that keeping it simple is the key to their deliciousness. You don’t need to pile on a ton of extras to make them amazing.
The beauty of Daddy’s Tacos is in their simplicity and the way each ingredient shines on its own. They’ve become a staple in our home, and I’m excited to share the recipe with you. Trust me, once you try them, you’ll be counting down the days until your next taco night, too!
Ingredients:
1-2 lbs Flank Steak
1 teaspoon Salt (adjust to taste)
1 teaspoon Pepper (adjust to taste)
½ cup Fresh Cilantro (chopped)
½ cup Onions (diced)
¼ cup Radishes (thinly sliced)
½ cup Salsa (or more, to taste)
8-10 Corn (street taco size) or Flour Tortillas
Instructions:
Season the Flank Steak:
Rub both sides of the flank steak with 1 teaspoon of salt and 1 teaspoon of pepper.
Grill the Steak:
Heat a grill or grill pan over medium-high heat.
Cook the steak for about 4-5 minutes on each side, depending on your desired level of doneness.
Once cooked, let the steak rest for about 5 minutes.
Chop the Steak:
Instead of slicing the steak into long pieces, chop it into small, bite-sized pieces. This makes the tacos easier to eat and ensures every bite is full of flavor.
Prepare the Toppings:
While the steak is grilling, chop ½ cup of fresh cilantro, dice ½ cup of onions, and thinly slice ¼ cup of radishes.
Warm 8-10 tortillas on the grill or in a pan until they’re slightly charred and pliable.
Assemble the Tacos:
Place a few small pieces of the chopped steak on each tortilla.
Top with a sprinkle of cilantro, onions, and radishes.
Add about 1 tablespoon of salsa to each taco, or more if desired.
Serve and Enjoy:
Serve the tacos immediately, while the steak is still warm.
Feel free to add extra salsa or any other favorite toppings.
These tacos are a hit in our home and the chopped steak makes them even more enjoyable to eat!
