This Easy Chinese Chicken Salad recipe holds a special place in my heart. It's a cherished family recipe from my stepmom's cookbook, a beloved classic that has graced our dinner table for years. Over time, I've taken it upon myself to give this family favorite a healthy makeover. The original version featured vegetable oil, those nostalgic ramen noodles we all remember from our childhood, and full-sodium soy sauce. While I tried to reduce the sugar content, I was unable to part with it entirely—after all, it's a massive salad, and the sweetness adds that perfect touch. Join me in savoring this delightful salad that strikes the ideal balance between tradition and health-consciousness.


Easy Chinese Chicken Salad


Ingredients for Salad

  • 1 leftover or freshly grilled chicken breast, finely chopped

  • 1 package of angel hair cabbage or coleslaw mix

  • 1 package of ramen noodles (crushed) or wonton strips

  • Option, cilantro or mandarine oranges would be good here but aren't something we use.

Ingredients for Dressing:

  • 2 tablespoons organic cane sugar (you can also use coconut sugar or reduce this by half)

  • 1/2 teaspoon salt

  • 1/2 teaspoon pepper

  • 1 tablespoon low-sodium tamari

  • 1/4 cup extra virgin olive oil

  • 1 tablespoon non-GMO sesame oil (not toasted)

  • 3 tablespoons organic vinegar

Directions for Dressing:

  1. Combine the ingredients for the dressing and shake well. Place in the refrigerator if possible. Overnight is best but you can use this right away also.

Directions for Salad:

  1. Left over chicken is a great option for this but for enhanced flavor, marinate the chicken breast in Coconut Secret Teriyaki Sauce for about 30 minutes.

  2. Cook the marinated chicken breast in the marinade until fully cooked.

  3. Let the cooked chicken rest for a few minutes, then finely chop it.

  4. In a bowl, combine all the other salad ingredients and mix.

  5. Add the prepared dressing and toss to coat.

  6. Let sit for 20-30 minutes to allow the ramen noodles to soak in the sauce and soften a bit. Since we now use a healthier option, they take a bit longer to soak in but taste amazing once they are a little softer.

  7. This recipe serves 4, with some extra. Feel free to double every aspect of the recipe if you want to make more.

Tips for Making it Even Better:

  • Marinating and cooking the chicken in Coconut Secret Teriyaki Sauce adds a delightful flavor dimension to this salad. Don't skip this step if you want to elevate the taste! Enjoy your delicious meal!

Serve with additional chicken on top if you would like to add more protein and save the extra for lunch tomorrow. Yes, it will still be delicious.
